Boy did I get excited when I heard that the San Marco Theater in Jacksonville would be showing “Food Inc.” It great to see community support for informative media. I love an explosive action film as much as the next person but when you can combine entertainment and eductation in one package you got yourself a truly worth while experience.

Successful Sprouting
Soaking and sprouting, sprouting and soaking, a wonderful combination that yeilds life. One of my most memorable expriences as a young raw fooder was the first time I sprouted wheat berries… what excitement to see those little guys put out roots and a tail! These days most of the sprouting I do is with quinoa and buckwheat which are both easy to sprout and fun to use in recipes. They’re also gluten free.
Here are the basics:
Quinoa – ancient food grain, high in protein
soak time: 1-2 hours
sprout time: 6 hours, until a tiny tail appears, sprouting too long will result in fermetation
uses: rejuvalac, breads/crackers, tabouli, salads
Buckwheat – seed, high in calcium
soak time: 45 minutes – 1 hour
sprout time: 6 hours, until a tiny tail appears, sprouting too long will result in fermetation
uses: breads/crackers, buckwheat beans, granola

Good Time in Chi-Town
Greetings from my favorite city in the States… Chicago. Last week I shared the drive with my parents from Jacksonville, FL all the way up the Chicago. Since arriving the weather has been amazing and I’ve had some super cool experiences. On Friday I dined at Cousin’s Incredible Vitality with my dad and some good friends. I loved the eggplant antipasta so much that I came back the next day for some more. This past Saturday I attended the dedication of the first certified organic rooftop farm in the US. It was on the roof of Uncommon Ground Cafe on the Northside of Chicago. Mayor Richard M. Daley gave a nice speech and cut the green ribbon. That evening I prepared dinner for a group of friends… the menu included guacamole a la Angie, marinaded portabellos, kelp noodles with an orange ginger almond sauce and pesto bell pepper boats.
Also on Saturday July 18th I’m scheduled to do a live food demo and dinner in Burr Ridge…
